January- While the temperature outside is in the single digits here in Chicago, I am missing a sunny summer day and the smell of sunscreen lotion. The best way for me to cope is staying inside and forget about how freezing it is outside.

This margarita reminded me of being on a summer patio. I enjoy nice weather and the sunlight while I am sipping a margarita. I can't wait for the summer to come back again.

Since the summer is not here yet, I choose to enjoy myself and a margarita! And this comes about just in time for Super Bowl Sunday. This low calorie margarita would be good for someone who hosts a Super Bowl party.

Most people gain weight during winter, so that makes me be careful of what I eat or drink. Even the cocktails that I am making at home have to be low in calories so I can still enjoy them without guilt.

Low Calorie Pineapple and Blueberry Frozen Margarita Recipe

This Pineapple and Blueberry Frozen Margarita recipe is low in calories and so delicious that it allows all of the fresh fruit flavors to shine through.

PREP TIME:  3 MINS, PLUS FREEZE TIME 30 MINS OR OVERNIGHT
MIX TIME: 2 MIN
TOTAL TIME:  5 MINS

INGREDIENTS:

2 ounces Tequila
4 ounces Be Mixed Margarita
4 pieces of frozen pineapple
1/4 cup of frozen blueberries
1/2 ounce lime juice
1/2 cup ice
Lime wheels or wedges and fresh pineapple, for garnish

DIRECTIONS:

Blend all ingredients until slushy, adding more ice as necessary.  Garnish with lime wheels or wedges and fresh pineapple. Serve immediately.
