Welcome to my special Christmas blog post.
I always have some type of bread - French roll, white bread, baguette, etc - in my pantry. Bread is always great to have on hand for making a quick sandwich for lunch or brunch but it can also be used to craft some more unique dishes. I decided to use some of the bread in my pantry to create a savory Christmas appetizer. When you use what’s already on hand in your home, you save money! So grab that bread from your pantry and create the perfect Christmas appetizer for your holiday gathering. Just be sure to save some slices for delicious leftovers the next day. Simply add your leftover meat, some fresh greens, and cranberry sauce. Then drizzle with dressing. Now you have an extra (and delicious) meal to enjoy. Since I had some French rolls already at home, I decided to create a tasty crostini to serve as an hors d’oeuvre that also pairs very well with wine or a cocktail. Crostini is a perfect and fun option to serve as a starter when hosting a party, having the gang over to watch football, or even just a light snack to serve for a small gathering (i.e. bookclub, neighborhood meeting, etc). This is a dish you can create over and over even after the holidays. Though, my Prosciutto, Arugula; Balsamic-Glazed Roasted Beet and Goat Cheese Crostini recipe is a terrific option for your holiday dinner party to entertain guests. All of the ingredients and flavors balance well together and truly complement one another. Topped with a hint of fresh thyme and honey balsamic sauce, this delightful bite is finished off with the perfect combination of sweet, savory, and tangy. These simple ingredients create something magical for your Christmas dinner parties. Welcome to my second blog post of December! December is the month of magic that is filled with joy, cheers, and love. Christmas songs are playing all day on the radio. Ladies all over are getting together to bake traditional Christmas cookies. Some are making Christmas shopping plans, and some are planning their perfect Christmas dinners. We all know about some of the Christmas traditions; some of us eat turkey, some ham, some prime rib, and some roast lamb on Christmas Eve. This Christmas I want to try something new and " Proscuitto Wrapped Pork Loin with Kale and Italian Sausage Stuffing" is something that fits right in! Also, this can be the best leftovers for the next day as it is good to make Italian Pork Loin sandwiches with! Simply layer the pork on your favorite bread, add salad leaves, pesto, onion, and some goat cheese. This recipe is great to serve for Christmas Dinner as it serves up to 8 people. I served it with roasted potatoes, and you can add cooked collard greens or a green salad on the side. Or you may served this pork as part of sandwiches such as they do in Italy. These gorgeous pieces provide the lovely layers tucked inside with kale, Parmesan Reggiano, and Italian sausage. I find that this recipe is most flavorful and a gorgeous pork loin that would be wonderful to serve for Christmas dinner. The salty prosciutto gives a nice flavor to the lean meat, the fat from Italian sausage keeps the meat moist, and infuses it with the robust flavor of fresh herbs. This holiday reminds me of the Thai New Year when everyone goes back to their hometown to celebrate the holiday with family and friends. We also have a ton of food and fully loaded to celebrate. Even though there will be so many different kinds of food on the table, I always save some room for dessert. I am a big fan of the pies, tarts, and quiches. And one of my favorite things to looking forward at the end of the night of celebration is pumpkin pie. I spent the majority of my awesome weekend testing pumpkin pie recipes. I was tasting this recipe no less than 3 times to make sure it comes out right because this is my second time making pumpkin pie. This pumpkin pie recipe is bursting with flavor. It’s rich, nutty, a little sour from apple cider, and delicious with a homemade pie crust with the salted caramel and pecans on the bottom. This pie will make everyone at your party say "WOW". This pie was a little challenging to me because when it comes to pumpkin pie, the standards are high. With this recipe I try to create two-layers with salted apple cider caramel + pecans on the bottom and a pumpkin filling on the top. Lucky me I tested only twice and the result came perfect. This filling is super rich tasting like a custard with a light pumpkin spice flavor, and surprise from the pecans and salted apple cider caramel on the bottom. The pie crust is the key to the great pumpkin pie! My homemade pie crust uses champagne vinegar which contains less water to create a tenderness while the flakiness still remains, plus the crust is still crunchy even having been baked with the pumpkin filling. You can get ready for ae homemade pumpkin pie that is unique right from your oven. This technique is from Rose Levy Beranbaum; she uses apple cider vinegar. I picked the Champagne vinegar because I love a super crunchy, dense and flaky pie, it contains less water than apple cider vinegar.
