I am a huge fan of potatoes for breakfast, whether you make them it at home or go out to eat. When at home, I love to toss potatoes with some smoked Polish sausage and top them with a sunny side-up egg. When I go out for breakfast or brunch, I tend to enjoy a dish more if that breakfast/brunch place makes a perfect brown crunchy potato breakfast dish.
This is a simple potato breakfast recipe you can make at home. I am sure everyone will already have these ingredients at home. The tip is flipping the potato every 20 minutes so you can get them golden brown on each side.
I would have this for brunch every weekend if I could. The crunchiness and flavors they are filled with are so good. They make a great side dish you can serve with ketchup on the side, or top them with a Sunny side-up Egg.

Roasted Potatoes Breakfast Recipe
Author: Nattaya Worrakitpoonpol YIELD: 10 serving PREP TIME: 15 MINS COOK TIME: 45 Minutes TOTAL TIME: 60 MINS 1 bag (5 Pounds) Red Potatoes, washed and diced or wedged uniformly 3 tablespoon steak rub 3 tablespoon smoked paprika 1 link of Smoked Polish sausage, med. diced 4 tablespoons extra virgin olive oil Directions: Preheat the oven to 425 degrees F. In a large bowl, toss together the potatoes, steak rub, smoked paprika, Smoked Polish sausage, and olive oil. Bake for 20 minutes, take it out from the oven and flip the potato with your spatula. Then bake for another 25 minutes or until it golden brown. Serve as a side dish with catsup or topped with a Sunny side-up egg. These are just a couple of my favorite suggestions.
