Nothing Better than having egg for breakfast especially when you hang over. In Thailand we do have similar dishes call Thai omelet, make differently (high heat with more oil ) without cheese and serve with Jasmine rice....

Coolllll , organic ingredient for me " I take it ". I was so excited to cook squash blossom, we don't have this in Thailand. ummmm what is taste like? and I do a lot of research what good with squash blossom and most I see re Frittata.... egg is good and I wanted to try that pretty flowers ... So that is why this recipe was born. You can do original recipe with whole egg in it too. This time I want to be light so I put egg white instead.

Light Squash Blossom Frittata
Ingredients
1/2 mince #onion
Olive oil
3 tablespoons fresh chop #leek
4 chop cloves of #Garlic
6 squash #blossoms
2 lightly beaten large eggs
10 oz liquid egg white
Salt and pepper
2 oz Parmigiano Reggiano
2 oz Grana Padano Paesan
2 oz Dutch Smoked cheese
Step
Preheat 375F
Saute onion, garlic and leek in olive oil in a nonstick oven proof skillet over medium heat about 4 mins . Low the heat ,add eggs. Season with salt and pepper and Top with cheese and squash blossoms. . Bake at 375 degrees until just set, about 20 minutes.
