Brussels Sprouts are one of my favorite vegetables to cook with. Stir fried, Grilled or roasted brings out the nutty flavor from Brussels sprout. Not only do they taste good, Brussels sprouts contain an excellent level of Vitamin C and Vitamin K, with more amounts of Vitamin B, such as folic acid, Vitamin B6 and of course also fiber.
This recipe is friendly for kids also. The kids that I am taking care of don't have any problem with the vegetable. But you know sometimes it is a little hard to combine children's meals into the family meal. So we tend to come up with great ideas for food in the family. With a great Mom they have, they always have a great meal with a good amount of nutrition.

When kids hear " Brussels spouts " , their face shows a big No NO. But after they try it, they love it !!!!! With nutty flavors from pine nut and brussels spouts. Kids love pasta so if they see a little green in the bowl that would not be a big deal :)

Ingredients
4 cups Thinly sliced Brussels spouts
2 cups sliced shitake mushrooms
3 cloves of chopped garlic
1 cup thinly sliced leek
2 tbsp. butter
2 tbsp. Extra virgin olive oil
1/4 cup chopped pecans
1/4 cup grated parmesan cheese
1 tsp. salt
Pepper

2 tbsp. Extra virgin olive oil
1/4 cup chopped pecans
1/4 cup grated parmesan cheese

Steps
- Bring a large heavy pot with salt, water and oil to boil. Follow the directions from the box.
- While cooking pasta, follow about half way of the directions on the box.
- Heat the large sauce pan over medium heat, add butter and let them melt in about 30 second. Add 1 tbsp. Extra virgin olive oil and garlic, sauté it together until the garlic turns a little light brown in about 1 min.
- Add leek, salt and pepper sauté it together about 2 min.
- Add shitake mushroom and sauté it for about 1 min.
- Add chopped pecan, let it roast in about 1 - 2 min.
- Add Brussels sprouts, Keep sautéing everything evenly in about 4 min or until Brussels spouts are cooked. Add remaining oil into a pan.
- Add cooked pasta into a pan, sauté everything together in about 1 - 2 min. Add grated parmesan cheese and stir it up and repeat in about 30 seconds.
