Chili Soup ( Megan style )
- 2 cans kidney beans
- 1 can red beans
- 1/4 cup extra virgin olive oil
- 1 large red onion, chopped
- 4 stalks celery, dice
- 4 cups of Vegetable stock
- 2 red bell peppers, chopped
- 2 cups of chopped carrot
- 1 cup chopped fresh cilantro for garnish
- 1 cup chopped fresh green onion for garnish
- 2 tbs cumin powder
- 2 tbs chili powder
- 1 tps cayenne powder
- 2 tbs sorano peppers
- salt and pepper
- In a large big heavy pot over high heat add extra virgin olive oil let it hot , in about 30 second. Add chopped red onion, dice celery, bell pepper, chopped carrot stir it together, in about 7 min or Until red onion caramelize.
- Add all spice and beans and vegetable stock, let it simmer over medium heat in about 1 and half hour.
- Scoop 5 cups of chili soup and blend it through. This is the secret !!! make this soup have a right consistency. Put it back in to the pot and let is simmer in about 30 min.
Serve with baguette : cilantro and green onion on top
