Dark has an amount of sugar or caramel, gives dark color and balances taste.

Light Soy Sauce Or Thin Soy Sauce 


Light soy sauce is make from soybean, light color, taste saltier than soy sauce. 

Mostly use in Thai and Chinese cuisines. I love to use light soy sauce for stir-fry, give depth of flavor.
