Thai Glass Noodle Salad or Yum Woon Sen is one of the most common salads offered in Thailand. It is made with a delicious lime and sweet chili dressing.
This type of salad is so easy to make; it can be done in no less than 15 minutes and is perfect for any weekday meal.
I used cooked ground pork to mix in with the Glass noodles, cilantro, green onion, red onion, deep fried shallot, and lime dressing. These ingredients all combine together to create a great balance with this signature salad flavor of tart, sweet, spicy, and salty.
For any seafood lovers reading, this dish may also be paired with your preferred seafood for a perfect match of flavors. Simply prepare your favorite choice of seafood and cook it in the hot boiling water. When done cooking, drain, and then toss all the ingredients together. I guarantee the end results will be super delicious!
The original recipe will also add some Thai chiles and mixed it all together. Today this recipe I will be eating with my little 15 month old so I will leave the chilies out this time, but you can add some chopped fresh Thai chilies or dry Thai chilies. That would be a tasty adult version.

INGREDIENTS
- 4 oz pre-soaked glass noodles,
- 1 cup of cooked ground pork
- ¼ cup water
- 3 red onion, thinly sliced
- 1 tablespoon chopped cilantro leaves
- 1 tablespoon chopped green onion
- ¼ cup deep fried Shallot
- 1 1/2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 2 tablespoons reserved ground pork cooking liquid
- 1 tablespoon fresh lime juice, or to taste
DIRECTIONS
- Soak the dry glass noodles with warm water for about 10 minutes (until soft). Discard the water, drain dry, and set aside. Boil some water and add in the glass noodles and cook according to the package instructions. Remove the noodles and drain. Keep some of the remaining water, about ¼ cup, to cook the ground pork in until it is completely cooked. Drain and save the pork flavored liquid in another bowl and set aside.
- Mix all the dressing ingredients together well (make sure the sugar is completely dissolved) and set aside.
- Add together in a large bowl the glass noodles, cooked ground pork, deep fried shallots, red onion, cilantro, and green onion with the dressing. Toss to blend well. Add more deep fried shallot as to your desire. Serve immediately at room temperature or chill in the refrigerator for 15 minutes before serving.
