Hommie Bagel With Egg, Bacon And Avocado Recipe

2 Pretzel Bagels, plain bagels or choose your own savory favorite
4 bacon strips, halved
1 whole avocado, sliced
Herbed cream cheese spread
4 tablespoons cream cheese
¼ teaspoon garlic, chopped
½ teaspoon fresh chives, chopped
1 teaspoon vinegar
2 large eggs
For the cream cheese spread: in a small bowl mix together well cream cheese, garlic, and chives: set aside.
In a medium skillet over medium heat, cook bacon until crisp and golden brown in color. Remove to paper towels and drain.
In a medium pot with 2 quarts of water and vinegar over medium low, bring to a simmer.
Break 1 egg into a small bowl or cup, and then slide egg into the water. Repeat with the remaining egg and poach at a simmer until you see the egg whites are firm, for about 2-3 minutes. Transfer eggs onto paper towels.
Toast the bagels then spread the herbed cream cheese; top with avocado, bacon, and poached eggs.
