The idea for Father's day menu Start with my friend Pack Cruz brought me some stout beer that her husband( Jason ) brewed it with bourbon and coffee. I have to tell you this guy well known as a great paintball master. Later on, I just found out that he is the Master of brewing beer . Trust me I am not just saying that because they giving me a few bottles of beer every time they visiting. I have to say it good because his beer are great .
Did I mentioned , Stout beer is my big thing !. Bourbon and coffee!!!! when I heard this two ingredient, I told Pack … let's put this for my Father's day menu idea on my blog. Then I am thinking about Rib with coffee rub and bourbon barbecue sauce. Roasted barbecue ribs with coffee dry rub were born !!!!
Ingredients:
½ cup packed dark brown sugar 2 teaspoons smoke paprika powder 1 teaspoon garlic powder ½ teaspoon freshly ground black pepper 2 teaspoon ground cumin 1 teaspoon instant espresso powder 1 teaspoon mustard powder 1 teaspoon coriander powder 1/4 teaspoon cayenne pepper 1 tablespoon coarse salt 2 whole slabs pork baby back ribs Braising Liquid 1 cup beer 2 tablespoons apple cider vinegar 2 tablespoons Worcestershire sauce 1 tablespoon organic agave hectar 1 tablespoon smoke liquid Smoky Barbecue Sauce 1 cup ketchup 4 tablespoons mild (light) molasses 3 tablespoons apple cider vinegar 1/2 cup bourbon 2 tablespoons Worcestershire sauce 3 tablespoons apple cider vinegar 1 tablespoon soy sauce 1 tablespoon Dijon mustard 4 tablespoons brown sugar 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon smoke paprika powder 1/2 teaspoon freshly ground black pepper
Steps
For the dry-rubbed ribs, in the big mixing bowl combine all dry ingredients. Rub the mixture all over each side, make sure to coat evenly. Cover with plastic wrap, refrigerate for at least 4 hours or overnight. Preheat 250 degree. In the small sauce pan over medium high heat with Beer, apple cider vinegar, worcestershire sauce,smoke liquid and honey, bring it to boil. Remove from the stove, set aside. Place the marinate ribs into roasting pan, gently pour the braising liquid over the ribs. Wrap the pan tightly with foil, roast them for 2 1/2 hours. Remove the ribs from the oven. with a ribs on the rack and discard the foil. Preheat the broiler. Meanwhile, in the medium saucepan over high heat with the braising liquid and smoky BBQ sauce ingredients, bring it to boil. Reduce heat, until reduced half way or about 30 minutes. Brush the glaze on top of each rack of ribs. Place the ribs back to the oven, until the glaze begins to caramelize, about 1-2 minutes. Serve with the bourbon barbecue sauce.
