Happy Sunday my dear friends!
I wish you had Christmas full of Love, Peace, Joy and Harmony!
I thought I would share this great smoky roasted Butternut Squash Recipe to start the week off on a good note.
Yesterday was a dull and rainy day in Chicago. I just wanted to cuddle up in my bed all day. But I had some butternut squash that was sitting in my kitchen for a week. It was a time to crack it open and roast it.
The Bright orange Smoky Roasted Butternut Squash has a smoky flavor and nuttiness which balanced with the sweetness of the squash.
Notes for the recipe
-This recipe is great to serve with pork chops and beef dishes. Also, try it over your mixed green salad or as a side dish or with udon noodle soup.
- I prefer to use fresh garlic as it brings out great flavor.
- I always use foil when I bake. It is easy to clean afterward.

"You love someone, you open yourself up to suffering, that's the sad truth. Maybe they'll break your heart, maybe you'll break their heart and never be able to look at yourself in the same way. Those are the risks. That's the burden.Like wings, they have weight, we feel that weight on our backs, but they are a burden that lifts us. Burdens which allow us" Bones
