I wish you had Christmas full of Love, Peace, Joy and Harmony! I thought I would share this great smoky roasted Butternut Squash Recipe to start the week off on a good note. Yesterday was a dull and rainy day in Chicago. I just wanted to cuddle up in my bed all day. But I had some butternut squash that was sitting in my kitchen for a week. It was a time to crack it open and roast it. The Bright orange Smoky Roasted Butternut Squash has a smoky flavor and nuttiness which balanced with the sweetness of the squash. Notes for the recipe -This recipe is great to serve with pork chops and beef dishes. Also, try it over your mixed green salad or as a side dish or with udon noodle soup. - I prefer to use fresh garlic as it brings out great flavor. - I always use foil when I bake. It is easy to clean afterward.
