Toasted Bagel With Mascarpone And Blueberry Compote Recipe Author: Nattaya Worrakitpoonpol YIELD: 2 serving PREP TIME: 8 MINS COOK TIME: 2 MINS TOTAL TIME: 10 MINS Ingredients: 2 Pretzel Bagels or plain bagels 1/4 cup blueberries 1 teaspoon granulated sugar 1 teaspoon water 1 teaspoon lemon zest 1/4 teaspoon fresh sqeezed lemon juice 2 tbsp Mascarpone Directions: Toast your Bagel until nicely browned. In a small pot over medium-high heat combine the sugar, blueberries, and water: heat until the sugar has dissolved and the blueberries are just starting to pop and the liquid turns to purple, for about 1-2 minutes. Remove from the heat, add lemon juice and mixed all the mixer together, set aside. Toast your bagels; then spread with the Mascarpone; top with the blueberry compote and lemon zest. Enjoy!
