Happy Friday My Friends!!! Today is a Happy Friday indeed and a very special day as it’s my One Year Blogging Anniversary! When I first started blogging I didn't know what blogging was except that it included recipes and my food pictures. Month by month passed by with all those experiences and new people I made friends with and the much more I continue to make friends with. It all gives me so much more story to blog about, more deliciousness for food stories, more fun with drink mixology, and where to find tasty food with my restaurant reviews. Now a days, I can't imagine my life without blogging as it gives me a wonderful way to connect with fantastic folks who have similar interests. In this past year, I have met and made friends with some wonderful and amazing folks. If I weren't a blogger, I don’t believe I would’ve to meet these incredible people. Thank you to my friends Megan Lafferty, Leeann Nel, and Nani Romero, who are all helping me to push myself in becoming a better writer. I am so happy and grateful to be able to connect with the lovely foodie community from Instagram in Chicago and all over the world. It has been a fantastic year filled with fabulous experiences. I would like to send out a HUGE thank you to all my friends and followers who have supported me along the way with following, commenting, liking, and for their continued ongoing support.
There’s nothing like a nice layered cake to celebrate a special occasion with. For this auspicious occasion, I chose this coconut covered citrus poppy seed layer cake. It is filled with a tangy and sweet lemon curd, coconut buttercream, and topped with a light pink colored white chocolate ganache drizzle, and lastly but most importantly filled with a lot of joy and cheer. Why have it to be poppy seed cake? This recipe is in honor of Anne Sills, a great good friend of mine. We met at a Thai restaurant back when I was worked as a waitress. She is one of my inspirations. Anne is a pastry chef and has an incredibly talented photographer husband. When we met, she gave me a few cake books, showed me how to bake a cake, and one of them was poppy seed cake. I remembered I couldn't stop eating it until it was all gone... It was so good. This yummy lemon poppy seeds cake would be good with that coconut buttercream and lemon curd filling inside. The creaminess from the coconut buttercream cuts through the tanginess of lemon curd so well. And once I start spooning the meringue through the coconut buttercream, through lemon poppy seed layer cake, is when the cake starts to come alive! This weekend the weather has felt like a nice warm spring start of with 55 degrees. Chicagoans deserve this kind of warm weather after we brave the cold winter months. These meringue cookies have a lovely light fluffy and airy texture and are perfect for this lovely warm weather. This a simple Lemon Meringue Kisses recipe with a fresh red and white combination of colors. I call this simple because these meringue kisses can be made with four simple ingredients: fresh egg whites, cream of tartar, granulated sugar and salt. I chose to dress them up with lemon zest for a fragrant citrus flavor and bright red color. These cookies can be spooned onto the baking sheet or piped to make them a bit more fancy. And that's all you need. These little light air fluff cookies are good as a gift, thank you gift, party favor, or decoration for the top of the cake. Thank you for stopping by and reading my article. Even though the weather is still cold, this piquant Thai Vegan Fiery Red Curry With Acorn and Chickpeas Recipe would be a good pick up with kick for this kind of weather. This bright and spicy recipe was inspired and requested from fellow food Pinterest and Instagram friends! I love my red curry soup with meat, shrimps, tofu or chickpeas. And today I tend to make it light and healthy for a vegan version; chickpeas are high in protein and fiber, so it is good by itself even though there is no meat in there. This recipe is super easy to make, good for a weeknight menu idea, and leftovers can turn into be a nice lunch for the next day. I packed red curry along with quinoa on the side and extra chickpeas. Guess who just bought a bag of blood oranges, and this is the first time to try them? The inside flesh is bright and attractive with a deep rich red like blood color. For those who love blood oranges, they know how exquisitely wonderful they taste. By far, this blood orange is my favorite; every bite is sweet with a deep rich citrus flavor which is perfect to make a smoothie with. Upon wondering what to combine this delicious fruit, which I decide to throw some blueberries in boosting the antioxidants and add some sweetness from pineapple. This wonderful deep rich red smoothie is definitely for citrus and blueberry lovers. It will be a great boost in the morning for those who hit the gym or simply a great start for your morning.
